Homemade Baked Beans
Serves: 4
Prep Time: 10 minutes
Cook Time: 20 minutes
What You’ll Need:
- 1 x 400g can cannellini beans
- 1 x 400g can four bean mix
- 2 x 400g can chopped tomatoes
- 1 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 2 tsp cumin
- 1 tbsp Dijon mustard
- 1 brown onion, finely diced
- ¼ cup chopped parsley
- 2 cloves garlic, crushed
- 2 bay leaves
- 1 tbsp brown sugar
- Salt and pepper to season
What You’ll Need To Do:
1. Drain and rinse the beans and set aside.
2. In a heavy bottomed saucepan, sauté the onion and garlic in some oil until soft. Add the tomatoes, tomato paste, Worcestershire sauce, cumin, mustard, bay leaves and brown sugar. Simmer for 10 minutes.
3. Test for seasoning and add salt and pepper if desired. Add the beans and parsley and cook for a further 5 minutes.
4. Serve with toasted sourdough topped with a fried egg.
